Caramel Apple Crumble Cake

In the fall, for some reason, I love to bake with apples. If you want to bake with apples, but don't know what you want to make, I really think you should try these goodies! A juicy bundt cake bottom filled with apples topped with a crispy caramel crumble.


The crispy surface of the crumble is made with browned butter. A perfect combination of the juicy and soft bottom along with the crispy, caramel-tasting crumble on top. For an extra luxurious cake, top with caramel sauce!


You'll need a baking tin 20 x 20 cm (8x8 inch).


Crumble:

120 g all-purpose flour

90 g granulated sugar

75 g light brown sugar

1 teaspoon ground cinnamon

A pinch of salt

85 g butter

1 tablespoon cold water


Apples:

3 medium-sized apples, diced

3 tablespoons granulated sugar

1/4 teaspoon ground cinnamon


Cake:

210 g all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

A pinch of salt

85 g butter, at room temperature

180 g granulated sugar

2 teaspoons vanilla extract

1 egg + 1 egg yolk, at room temperature

150 g Greek yoghurt

100 ml buttermilk - recipe further down


Instructions:

  1. Preheat oven to 350 °F.

  2. Start by making the buttermilk. Mix 100 ml of milk with 1/4 tbsp apple cider vinegar. Leave to stand for at least 10 minutes (buttermilk helps the cake to become extra juicy and fluffy).

  3. Continue with the crumble. Melt the butter in a saucepan over medium heat. Stir constantly until the butter starts to foam, turns a clear colour and then turns brown. This will take about 5 minutes. Allow the browned butter to cool slightly.

  4. Mix the other ingredients in a bowl, except the water, to the crumble. Add the cooled browned butter.

  5. Mix everything together, then add cold water. Mix to a crumbly dough. Then place the crumble in the fridge until it is time to use.

  6. Start with the apples. Put the diced apple pieces in a saucepan along with the sugar and cinnamon. Cook together for a few minutes until the apples are caramelized by the sugar. Set aside to cool.

  7. Continue with the cake. In a bowl, mix the flour, baking powder, baking soda and salt.

  8. In another bowl, whisk the butter, sugar and vanilla until light and fluffy with an electric mixer at medium speed.

  9. Add the egg and egg yolk, one at a time, and mix well.

  10. Mix the Greek yogurt with the buttermilk in a small bowl.

  11. Then add the flour mixture and yogurt mixture to the whipped batter, a little at a time while whisking at medium speed.

  12. Pour the batter into the pan and spread it evenly with a spatula. Add the apple pieces over the batter.

  13. Bring out the cooled crumble and spread it evenly onto the batter in the pan.

  14. Bake for about 40-45 minutes (time may vary depending on the oven and juicyness of the apples). Start checking the cake with a stick at about 30 minutes in the oven.

  15. Allow the cake to cool for about 1 hour before topping with caramel sauce.
