Chewy Coconut Cookies (Cuts)

Coconut cuts - two of my favorite things combined into one. Garnish with icing and you have a cookie that everyone will love!



This recipe will give you about 30 coconut cookies.
Ingredients:
125 g butter, at room temperature
90 g granulated sugar
120 g all-purpose flour
70 g shredded coconut
1 tablespoon vanilla extract
1 tsp baking powder
4 tablespoons golden syrup
A pinch of salt
Icing:
Powdered sugar
Water
Instructions:
Preheat oven to 350 °F. Prepare baking sheets and line them with parchment paper, set aside.
Whisk the butter and sugar light and fluffy.
Mix all the dry ingredients in a bowl and add it to the butter mixture.
Finally, stir in the syrup and mix everything together into a dough.
Divide the dough into three parts.
Roll each part into lengths and place on your baking sheets. Flatten the dough lightly. I barely flatten it at all as I want the cuts to get a bit thicker in the middle.
Bake for about 10 minutes.
Allow the cookies to cool a bit (about 2-3 minutes) before cutting them. Cut them diagonally into individually cookies about 2-3 cm (1 inch) thick.
Allow the cookies to cool completely before garnishing them with icing.
Icing: Mix together the powdered sugar and a little bit of water into a smooth icing. Drizzle the icing over the cookies and finally sprinkle some shredded coconut on top.
