Chewy Saffron Cookies (Cuts)

As you already know by now, one of my all-time favorite cookie is the chewy caramel cookie. This recipe is a lovely hybrid of them and saffron; Chewy Saffron Cuts. The key for the chewy middle is golden syrup.

This recipe will give you about 30 saffron cuts.


Ingredients:

100 g butter, at room temperature

90 g granulated sugar

0,5 g saffron

150 g all-purpose flour

1 tablespoon vanilla

1 teaspoon baking powder

4 tablespoons golden syrup

A pinch of salt


Decor:

Pearl sugar

Instructions:

  1. Preheat oven to 350 °F. Prepare baking sheets and line them with parchment paper, set aside.

  2. Whisk the butter, sugar and saffron light and fluffy.

  3. Mix all the dry ingredients in a bowl and add it to the butter mixture.

  4. Finally, stir in the syrup and mix everything together into a dough.

  5. Divide the dough into three parts.

  6. Roll each part into lengths and place on your baking sheets. Flatten the dough lightly. I barely flatten it at all as I want the cuts to get a bit thicker in the middle.

  7. Bake for about 10 minutes.

  8. Allow the cookies to cool a bit (about 2-3 minutes) before cutting them. Cut them diagonally into individually cookies about 2-3 cm (1 inch) thick.

  9. Eat them right away or store them in the fridge or freezer in a closed box.
