Chocolate Chip Cookie Bars

Chocolate chip cookies - but instead of a cookie it's a bar! Just pour all the batter into a baking tin, bake and then cut into squares. Easy and quick!

This recipe is the best of both worlds. You'll get the yummy chocolate chip cookie, but in a thicker and chewier form. If you haven't tried this recipe, do it now!

You'll need a baking tin 20 x 20 cm (8x8 inch). If you want the bars a bit more flattened, bake in a pan 23 x 23 cm (9x9 inch).


Ingredients: 225 g butter 240 g light brown sugar 90 g granulated sugar

2 tsp vanilla extract 2 eggs, at room temperature

1 egg yolk, at room temperature 330 g all-purpose flour 1 tsp baking powder

1 tsp cornstarch 1 pinch of salt 150-200 g semisweet chocolate chips/or chocolate chopped into chunks + extra topping


Instructions:

  1. Preheat oven to 350 °F. Prepare baking sheets and line them with parchment paper, set aside.

  2. Melt the butter in a saucepan over medium heat. Let it cool.

  3. Stir together the melted butter with the light brown sugar and granulated sugar.

  4. Add the eggs, egg yolk and vanilla and whisk together into a smooth batter.

  5. Add the flour, baking powder, cornstarch and salt and mix together into a sticky dough.

  6. Add the chocolate chips and mix well. Pour the batter evenly in your pan.

  7. Press some extra chocolate chips on top, then bake for about 20-25 minutes. The edges should be firm and the center of the cake should slightly tremble if you shake it a bit.

  8. Press a few extra chocolate chips as soon as you remove the cake from the oven.

  9. Allow the cake to cool before cutting into squares.
