Easy Pistachio Ice Cream

Is there anything that beats a delicious ice cream on a hot summer day? I don't think so. Today I share my recipe for a really tasty pistachio ice cream.
I don't own an ice cream machine and LOVE this easy way of making ice cream. It's so simple. For this recipe I actually got the idea from my partner. He loves ice cream. And he loves pistachio ice cream.


The ice cream is made in any container you like/prefer. I used a glass lunchbox (21x15 cm) in this recipe. The recipe is enough for two such boxes.
Ice cream (base):
500 ml heavy whipping cream (at least 30% fat)
1 jar of sweetened condensed milk (about 400 g)
1 tablespoon vanilla
Pistachio paste:
100 g unsalted peeled pistachios
25 g granulated sugar
15 g powdered sugar
If needed, some neutral oil
Instructions:
Start with the pistachio paste. Put the pistachio nuts, sugar and powdered sugar in a blender and mix until it becomes a batter/paste. If the paste feels dry, add some neutral oil and mix until combined and has a moderate consistency.
Continue with the ice cream base. In a larger bowl, whisk the cream to soft tops.
Add the condensed milk and vanilla into the cream and whisk until combined.
Add the pistachio paste in the ice cream and mix until it spreads evenly in the batter.
Pour the ice cream into your prepared container and freeze for at least 6 hours.
Before serving, garnish with a few pistachio nuts.
