Overnight Bread

Freshly baked rolls for breakfast is hard to beat. With these simple rolls fermenting in the fridge during the night, you're guaranteed a luxury breakfast the next morning.

Recipe for about 12 overnight bread rolls.
Ingredients:
25 g yeast
500 ml water
A pinch of salt
2 tsp olive oil
About 660 g all-purpose flour
Instructions:
Crumble the yeast into a bowl and pour in the water. Mix until the yeast dissolves completely.
Add the salt and mix until the salt has dissolved as well.
Add the flour, a bit at a time, together with the olive oil.
Mix until a loose dough. Don't work it too long.
Cover the bowl and put it in the fridge overnight.
In the morning, preheat the oven to 430 °F. Put the dough on a well-floured baking table. Do not knead the dough!
Divide the dough into 12 equally large pieces.
Place the 12 pieces on prepared baking sheets with parchment paper.
Bake in the oven for about 15 minutes or until they have a golden brown surface.
